In fact, the Sicilian green pistachio has a high chlorophyll content, higher than any type of pistachio, and it takes its intense green color from this characteristic.
Pistachios are oil seeds and, despite being included in the large group of dried fruit, they have hybrid properties that reflect some characteristics and nutritional functions typical of other food groups. In fact, they contain fats, mainly providing lipids, without being associated with oils which in any case have a dietary purpose for the organism, they are poor in sugars and water but rich in vitamins, including those of group B, unlike the rest of the fruits and vegetables they have vitamins A and C and contain a lot of water.
